Understanding the essence of the spirit we wish to produce is a lengthy and all consuming process, but one that is highly rewarding and leads to exceptionally well defined drinks.
1. Research the serve
The first step in creating a new SRVD product comes in understanding the various ways it can be made. We look through our library of books about the history of cocktails, understanding where they've come from, how the serve has evolved and the reasons why. This gives us a grounding from where we can explore why certain techniques or garnishes are used and what they bring to the profile of the drink.
2. Consult with world famous bartenders
In order to create the perfect spirit for a serve, we need to understand how the best bartenders approach it - the type of texture, balance, acidity and sweetness they look for, and the recipes they use to achieve that. It's normal to have a few different approaches, but we also find strong commonalities which educate our approach.
3. Travel to source
We will leave no stone unturned in order to create the perfect bottle of SRVD and part of that involves visiting the regions where the spirits we create have a strong heritage, in order to learn from the best producers, to understand the suppliers who can provide the ultimate raw ingredients, so that when we produce a new bottle at SRVD we end up with a detailed, complex product.
4. Brief our product
After researching, consulting and travelling we are able to add in our own knowledge of the drink we want to create and create a draft production brief outlining the type of spirit we wish to create.
5. Batch test
We test numerous recipes within the confines of our brief and test them extensively, tweaking then testing again until we're sure we have the ultimate recipe for the bottle of SRVD in question.
6. Consumer test
We blind taste with cocktail lovers and bartenders and if the recipe for SRVD is not wholly endorsed as being pinpoint then back to the recipe we go.
Only once we have endorsement from both consumers and professionals that our spirit is exemplary and fit for purpose do we head to production.
